Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas with a fork. Stir in the melted butter until well combined.
- Mix in the sugar, beaten egg, and vanilla extract to the banana mixture until smooth.
- Sprinkle the baking soda and salt over the mixture, then mix. Lastly, add the flour and stir until just combined (be careful not to overmix!).
- Grease a 4x8 inch loaf pan and pour in the batter.
- Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
- Once done, let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice, serve, and enjoy!
Notes
Banana bread pairs wonderfully with a cup of coffee or a tall glass of milk. For brunch, serve alongside fresh fruit salad, whipped cream and strawberries, or a dollop of peanut butter or cream cheese. Store leftovers wrapped at room temperature for up to 3 days, or slice and freeze in airtight container for up to 3 months.
