Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • cup vegetable oil Can substitute with melted coconut oil or melted butter.
  • 1 cup milk Can substitute with almond or oat milk for a dairy-free version.
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon For the muffin batter.
Streusel Topping
  • cup all-purpose flour
  • cup brown sugar
  • ¼ cup unsalted butter, softened
  • ½ teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt until well combined.
  3. In a separate bowl, mix the vegetable oil, milk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients, stirring until just combined. Add in the ground cinnamon and mix gently.
Streusel Topping
  1. In a small bowl, mix the flour, brown sugar, softened butter, and cinnamon together with a fork until you achieve a crumbly texture.
Baking
  1. Spoon the muffin batter into the prepared muffin cups, filling them about two-thirds full.
  2. Top each muffin with a generous sprinkle of the streusel mixture.
  3. Place the muffin tin in the oven and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  4. Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

To store, keep muffins in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Reheat in the microwave for about 20-30 seconds or warm in the oven at 350°F.
