Preparation
  1. Preheat your oven to 425°F (220°C) to ensure a crispy texture.
  2. Wash and slice the zucchinis into fry-like sticks (about 1/2 inch thick).
  3. In one bowl, whisk the eggs. In another bowl, mix the bread crumbs, parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Dip each zucchini stick into the egg mixture, allowing the excess to drip off, then roll in the bread crumb mixture until fully coated.
  5. Place the coated zucchini fries on a baking sheet lined with parchment paper, giving them some space to breathe.
  6. Lightly spray cooking oil on them for even browning.
Baking
  1. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown.
  2. Let them cool slightly before serving with your favorite dip.

Notes

Store leftovers in an airtight container for up to three days. Reheat in the oven at 350°F (175°C) for about 10 minutes to restore crispness.
