- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add a drizzle of olive oil. Once warmed, toss in the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped spinach and cook until wilted, around 2-3 minutes. Remove from heat.
- In a mixing bowl, combine the ricotta cheese, sautéed spinach, Parmesan cheese, and fresh herbs. Season with salt and pepper. Stir until well combined.
- Spoon the mixture into a small oven-safe dish or ramekins, smoothing it out evenly.
- Lightly drizzle olive oil on top of the ricotta mixture.
- Place in the preheated oven and bake for about 25 minutes until the top is lightly golden.
- Allow to cool for a moment before serving hot.
Notes
Experiment with different toppings like sun-dried tomatoes or olives. Make ahead by preparing the ricotta mixture and refrigerating it until ready to bake. Avoid overbaking to prevent drying out.
