For the Baked Ricotta
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (basil or thyme), chopped Feel free to mix with other herbs
  • to taste Salt and pepper
  • for drizzling tablespoon Olive oil For a golden finish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add a drizzle of olive oil. Once warmed, toss in the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped spinach and cook until wilted, around 2-3 minutes. Remove from heat.
  4. In a mixing bowl, combine the ricotta cheese, sautéed spinach, Parmesan cheese, and fresh herbs. Season with salt and pepper. Stir until well combined.
  5. Spoon the mixture into a small oven-safe dish or ramekins, smoothing it out evenly.
  6. Lightly drizzle olive oil on top of the ricotta mixture.
  7. Place in the preheated oven and bake for about 25 minutes until the top is lightly golden.
  8. Allow to cool for a moment before serving hot.

Notes

Experiment with different toppings like sun-dried tomatoes or olives. Make ahead by preparing the ricotta mixture and refrigerating it until ready to bake. Avoid overbaking to prevent drying out.
