Preparation
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine ricotta cheese, half of the mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper. Stir until well mixed.
- Pound each chicken breast to an even thickness.
Assembly and Baking
- Place the chicken in a greased baking dish. Spoon the ricotta mixture onto each chicken breast.
- Sprinkle the remaining mozzarella on top.
- Drizzle olive oil over the top and bake for 25-30 minutes, until chicken is cooked and cheese is bubbly.
Serving
- Let the dish rest for a few minutes, garnish with fresh basil if using, and serve warm.
Notes
If you have leftovers, store in an airtight container in the refrigerator for 3-4 days. Reheat in a preheated oven or microwave.
