  • 4 pieces boneless, skinless chicken breasts
  • 1 cup ricotta cheese Check for Halal certification
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese Use Halal-friendly alternative if needed
  • 2 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon olive oil
  • optional leaves Fresh basil, for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, combine ricotta cheese, half of the mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper. Stir until well mixed.
  3. Pound each chicken breast to an even thickness.
Assembly and Baking
  1. Place the chicken in a greased baking dish. Spoon the ricotta mixture onto each chicken breast.
  2. Sprinkle the remaining mozzarella on top.
  3. Drizzle olive oil over the top and bake for 25-30 minutes, until chicken is cooked and cheese is bubbly.
Serving
  1. Let the dish rest for a few minutes, garnish with fresh basil if using, and serve warm.

Notes

If you have leftovers, store in an airtight container in the refrigerator for 3-4 days. Reheat in a preheated oven or microwave.
