- Preheat your oven to 400°F (200°C). Wash the potatoes, pierce them with a fork, and bake them for about 45 minutes, or until they are tender.
- In a large pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until bubbly and golden.
- Gradually whisk in the chicken broth and milk, continuing to stir until the mixture thickens.
- Once the potatoes are baked and cool enough to handle, scoop out the insides into the pot and discard the skins. Mash the potatoes slightly and stir until well combined.
- Add the sour cream, half of the shredded cheese, salt, and pepper. Stir until everything is well incorporated and the soup is warmed through.
- Top each serving with the remaining cheese and a generous sprinkle of chopped green onions.
