  • 4 pieces ripe pears Choose firm, ripe pears for best results.
  • 4 ounces goat cheese Creamy goat cheese works best.
  • 1/4 cup honey
  • 1/2 cup cranberries (dried or fresh) Dried cranberries add a chewy texture.
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice Helps to prevent browning of the pears.
  • 1/4 cup chopped nuts (optional) Chopped walnuts or pecans add crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Carefully wash the pears and slice them in half. Optionally, scoop out the core.
  3. Place a generous scoop of goat cheese in the center of each pear half.
  4. Drizzle honey over each pear to enhance the sweetness.
  5. Sprinkle cinnamon on the pears, then add cranberries on top or underneath the cheese.
  6. Squeeze lemon juice over the pears.
  7. Place pears on a baking sheet lined with parchment paper and bake for about 25 minutes.
  8. If using, sprinkle chopped nuts on top before serving.
  9. Serve warm immediately.

Notes

For a lower-fat alternative, use ricotta cheese instead of goat cheese. Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the oven at 350°F (175°C).
