  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup mixed fruits (e.g., bananas, blueberries, apples) Feel free to mix and match fruits.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, milk, eggs, brown sugar, baking powder, vanilla extract, cinnamon, and salt.
  3. Gently fold in your choice of fruits until evenly distributed throughout the mixture.
  4. Lightly grease an 8x8 inch baking dish. Pour the mixture evenly into the dish.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the center is set.
Serving
  1. Allow the baked oatmeal to cool slightly before serving. Enjoy it warm, topped with yogurt or more fruits if desired!

Notes

Baked oatmeal can be stored in an airtight container in the refrigerator for up to a week. Reheat in the microwave for a quick 30-second burst.
