Ingredients
  

For the filling
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For the jalapeños
  • 8 jalapeños, halved and seeded You can leave a few seeds for extra heat if desired.
For the topping
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs if needed.
  • Olive oil for drizzling Drizzle for extra crispy goodness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the jalapeños in half lengthwise and remove the seeds.
Filling
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, and a sprinkle of salt and pepper. Mix until well blended and creamy.
  2. Spoon the cheese mixture generously into each jalapeño half.
Baking
  1. Place the stuffed jalapeños in a baking dish and drizzle a little olive oil over them.
  2. Sprinkle the breadcrumbs over the tops of the stuffed jalapeños.
  3. Bake for about 20-25 minutes, or until the jalapeños are tender and the tops are golden brown.
Serving
  1. Remove from the oven, let them cool slightly, and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for about 10-15 minutes.
