  • 6 large large eggs
  • 1 cup milk Can be substituted with almond or coconut milk for a dairy-free version.
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar Adjust based on your preference for sweetness.
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter
  • to taste powdered sugar for serving Can also add fresh fruit.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together the eggs, milk, flour, sugar, salt, and vanilla until smooth.
  3. Place a cast-iron skillet or baking dish in the oven to heat. Once hot, add the butter and let it melt.
  4. Pour the batter directly into the hot skillet once the butter is melted.
  5. Return the skillet to the oven and bake for about 20 minutes, or until puffed up and golden brown.
  6. Remove from the oven, dust with powdered sugar or top with fresh fruit, cut into slices, and serve.

Notes

Avoid opening the oven door while baking to prevent collapsing. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat in the oven at 350°F for 5-10 minutes.
