  • 4 large large eggs
  • 200 g block of feta cheese
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil Divided; 1 tbsp for tomatoes and 1 tbsp for feta
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill) for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, arrange the cherry tomatoes. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper for seasoning.
  3. Place the block of feta cheese in the center of the tomatoes. Drizzle the remaining olive oil over the feta.
Baking
  1. Bake in the preheated oven for about 15 minutes until the feta is golden and slightly softened.
  2. Crack the eggs directly into the baking dish around the feta and tomatoes. Season the eggs with more salt and pepper.
  3. Return to the oven for 5-10 minutes, or until the eggs are cooked to your desired consistency.
Finishing
  1. Once out of the oven, sprinkle fresh herbs on top. Serve hot with crusty bread or your favorite side.

Notes

For substitutions, goat cheese can be used instead of feta. Keep an eye on the eggs for desired doneness, especially if you prefer runny yolks.
