Preparation
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish or individual ramekins.
- In a mixing bowl, beat the eggs until they are well combined. Make sure there are no streaks of egg white visible.
- Add the cottage cheese, shredded cheese, salt, black pepper, and garlic powder (if using) to the beaten eggs. Stir gently until the mixture is fully incorporated.
- Pour the mixture into the prepared baking dish or divide it between the ramekins.
Baking
- Bake in the preheated oven for about 20-25 minutes, or until the eggs have set and the top is lightly golden.
- Remove from the oven and let cool for a couple of minutes. Garnish with chopped fresh herbs if desired, and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for about 30 seconds to 1 minute. Freeze casserole for up to 2 months; thaw in the refrigerator before reheating.
