For the Bites
  • 4 pieces Mini bagels, sliced in half Use fresh mini bagels for the best flavor.
  • 1 large Cucumber, sliced Keep the skin on for crunch or peel it for a softer bite.
  • 8 oz Cream cheese, softened Ensure cream cheese is softened for easier mixing.
  • 1 tablespoon Fresh dill or other herbs (optional), finely chopped Customize with various fresh herbs if desired.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Slice each mini bagel in half horizontally to create bases for toppings.
  2. Cut the cucumber into thin slices, about ΒΌ inch thick.
  3. In a bowl, mix the softened cream cheese with fresh dill, salt, and pepper.
  4. Spread the cream cheese mixture on each bagel half and top with a cucumber slice.
Serving
  1. Arrange the assembled Bagel Cucumber Bites on a serving platter.
  2. Optionally, sprinkle more dill on top for a gourmet touch.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Best not to freeze to maintain the crunch of cucumbers. Reheat lightly in the oven to warm.
