Ingredients
  

For the Pie Crust
  • 1 crust unbaked pie crust store-bought or homemade
For the Filling
  • 2 cups pureed pumpkin canned or fresh
  • 1 cup heavy cream
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Roll out the pie crust and place it in a 9-inch pie pan, crimping the edges for a nice presentation.
  3. In a large mixing bowl, combine the pureed pumpkin, heavy cream, brown sugar, and granulated sugar. Whisk until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the pumpkin pie spice, salt, and vanilla extract until combined.
  6. Pour the pumpkin mixture into the prepared pie crust, smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for 15 minutes.
  2. Reduce the temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until a knife inserted into the center comes out clean.
Cooling & Serving
  1. Let the pie cool on a wire rack before serving.
  2. Enjoy it warm or chilled, with a generous dollop of whipped cream.

Notes

Use fresh pumpkin puree if possible for better flavor. Don't skip the spices for best results. Allow the pie to cool completely before slicing for cleaner servings.
