Preparation
- Preheat the oven to 425°F (220°C).
- Roll out the pie crust and place it in a 9-inch pie pan, crimping the edges for a nice presentation.
- In a large mixing bowl, combine the pureed pumpkin, heavy cream, brown sugar, and granulated sugar. Whisk until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the pumpkin pie spice, salt, and vanilla extract until combined.
- Pour the pumpkin mixture into the prepared pie crust, smooth the top with a spatula.
Baking
- Bake in the preheated oven for 15 minutes.
- Reduce the temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until a knife inserted into the center comes out clean.
Cooling & Serving
- Let the pie cool on a wire rack before serving.
- Enjoy it warm or chilled, with a generous dollop of whipped cream.
Notes
