- Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it gently with a fork, adding a pinch of salt and pepper to taste.
- Take one slice of bread and spread the mashed avocado evenly on it. Layer the mozzarella cheese slices and tomato slices on top.
- Top the tomatoes with the second slice of bread, creating a sandwich.
Cooking
- In a non-stick skillet over medium heat, melt the butter (or heat the olive oil) until bubbling.
- Place the assembled sandwich in the skillet. Cook for about 3-4 minutes on one side, or until it's golden brown and crispy.
