- Start by washing all your produce thoroughly. Cut the avocados and mangoes into bite-sized pieces, keeping them chunky.
- Finely chop the red onion and bell pepper.
- Chop the fresh cilantro and toss it with the other ingredients in a large bowl. Reserve some for garnish if desired.
- In a separate bowl, whisk together lime juice, olive oil, and a pinch of salt and pepper to create the dressing.
- Pour the dressing over the avocado-mango mixture and gently fold everything together. Be careful not to mash the avocados.
- Taste the salad and adjust the seasoning if necessary.
- Serve immediately or let it sit for about 10 minutes for the flavors to meld. Enjoy chilled or at room temperature.
Notes
Store leftovers in an airtight container in the refrigerator for 1-2 days. Drizzle lime juice on top to preserve color. Best enjoyed fresh.
