Method
 

Preparation
  1. Hard boil the eggs: Place the eggs in a saucepan, cover with cold water, bring to a rapid boil, cover, and remove from heat. Let sit for 12 minutes, then cool in ice water.
  2. Peel the eggs: Once cooled, crack the egg shells and peel them under running cold water.
  3. Prepare the filling: Slice the eggs in half and scoop the yolks into a mixing bowl. Add avocado, lime juice, mayonnaise, mustard, and garlic. Mash until smooth.
  4. Season the filling: Taste and adjust seasoning with salt and pepper.
  5. Fill the egg whites: Use a spoon or piping bag to fill the halved egg whites with the avocado mixture.
  6. Garnish: Sprinkle with paprika or chili powder and top with fresh herbs.
  7. Serve: Enjoy immediately or refrigerate until ready to serve.

Notes

Substitutions available: Greek yogurt can replace mayonnaise for a healthier option. Use plastic wrap pressed onto the surface of avocado mixture to minimize browning.
