Method
Cooking Pasta
- Begin by bringing a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes.
- Reserve half a cup of pasta water before draining.
Preparing Avocado Sauce
- While the pasta is cooking, slice the avocados in half, remove the pit, and scoop the flesh into a blender or food processor.
- Add the minced garlic, lemon juice, salt, and pepper, and blend until smooth and creamy.
- If the mixture is too thick, add a tablespoon of reserved pasta water, blending until you reach your desired consistency.
Combining Pasta and Sauce
- Once the pasta is drained, return it to the warm pot.
- Add the creamy avocado sauce and toss until the pasta is well coated.
- If needed, add more pasta water to achieve a silky texture.
Serving
- Transfer the pasta to serving dishes.
- Sprinkle with Parmesan cheese (if using) and garnish with fresh basil.
- Serve immediately and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. For extended storage, freeze the avocado sauce separately. Ensure to mix it with freshly cooked pasta when ready to serve.
