  • 2 ripe avocados Ensure they are ripe.
  • 200 g pasta (your choice of spaghetti, penne, or fusilli) Any pasta shape can be used.
  • 2 cloves garlic (minced)
  • 1 lemon (juiced, about 2 tablespoons) Freshly squeezed for best flavor.
  • Salt (to taste)
  • Pepper (to taste)
  • Parmesan cheese (optional, ensure it’s halal) Use as a topping if desired.
  • Fresh basil (for garnish) For added flavor and presentation.

Method
 

Cooking Pasta
  1. Begin by bringing a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes.
  3. Reserve half a cup of pasta water before draining.
Preparing Avocado Sauce
  1. While the pasta is cooking, slice the avocados in half, remove the pit, and scoop the flesh into a blender or food processor.
  2. Add the minced garlic, lemon juice, salt, and pepper, and blend until smooth and creamy.
  3. If the mixture is too thick, add a tablespoon of reserved pasta water, blending until you reach your desired consistency.
Combining Pasta and Sauce
  1. Once the pasta is drained, return it to the warm pot.
  2. Add the creamy avocado sauce and toss until the pasta is well coated.
  3. If needed, add more pasta water to achieve a silky texture.
Serving
  1. Transfer the pasta to serving dishes.
  2. Sprinkle with Parmesan cheese (if using) and garnish with fresh basil.
  3. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. For extended storage, freeze the avocado sauce separately. Ensure to mix it with freshly cooked pasta when ready to serve.
