Ingredients
  

Salad Ingredients
  • 4 cups arugula Fresh, rinsed and dried
  • 1 piece apple, thinly sliced Sweet or tart variety
  • 1/2 cup walnuts, toasted Toast in a dry skillet
  • 1/4 cup crumbled feta cheese Optional ingredient
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Rinse the arugula under cold water to remove any dirt. Pat it dry gently with a clean kitchen towel or use a salad spinner to dry it.
  2. In a dry skillet over medium heat, add the walnuts. Stir frequently for about 3–5 minutes until they are golden and fragrant. Be careful not to burn them!
  3. Slice your chosen apple thinly. You can leave the skin on for added texture and nutrients.
Combining and Dressing
  1. In a large mixing bowl, combine the arugula, sliced apples, toasted walnuts, and feta cheese if using.
  2. Drizzle the olive oil and apple cider vinegar over the salad. Season with salt and pepper, then toss gently to combine.
Serving
  1. Transfer the salad to a serving platter or individual bowls. Enjoy fresh!

Notes

For added variety, substitute apples with pears or change nuts to almonds, pecans, or sunflower seeds. Serve immediately after dressing to prevent wilting.
