  • 1 cup dried apricots, chopped For better distribution throughout the bake.
  • 2 cups milk
  • 4 pieces eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Butter For greasing the baking dish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a medium-sized baking dish with butter.
  3. Chop the dried apricots into small pieces.
  4. In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, and salt until well combined.
  5. In another bowl, mix the flour and baking powder. Slowly add this mixture to the wet ingredients, stirring until you have a smooth batter.
  6. Gently fold the chopped apricots into the custard batter.
Baking
  1. Pour the mixture into your prepared baking dish and bake for 45 minutes, until the top is set and lightly golden.
  2. Allow the Apricot Custard Bake to cool slightly before serving.

Notes

This dish can be served warm or chilled. Perfect with whipped cream or fresh fruit on top. It can be stored in the fridge for up to 3 days or frozen for up to 3 months.
