  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup applesauce
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13 inch baking pan or line it with parchment paper.
  3. In a large mixing bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk together.
  4. In another bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, then mix in applesauce and vanilla extract.
  5. Gradually fold the dry mixture into the wet mixture until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
Baking
  1. Bake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack.
  3. Dust with powdered sugar if desired and slice into squares.

Notes

This cake can be stored covered in plastic wrap in the refrigerator for up to five days or frozen for up to three months. Defrost overnight and warm in the microwave for best taste.
