Apple Pie Pop Tarts

A delicious homemade version of the beloved toaster pastry filled with warm, spiced apples encased in buttery pastry, reminiscent of classic apple pie.

Ingredients
  

For the filling
  • 2 cups peeled and diced apples
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
For the crust and glaze
  • 1 package refrigerated pie crusts
  • 1 egg for egg wash
  • 1 tablespoon milk for egg wash
  • optional Powdered sugar and milk for glaze

Method
 

Preparation
  1. Preheat the oven: Set your oven to bake at 400°F (200°C).
  2. Prepare the filling: In a bowl, combine the diced apples, 3/4 cup of sugar, cinnamon, and lemon juice. Toss until the apples are evenly coated.
  3. Roll out the pie crust: Unroll the refrigerated pie crust on a lightly floured surface and cut it into rectangles (about 4"x6" each).
  4. Fill the crusts: Place a tablespoon of the apple filling in the center of half of the rectangles. Do not overfill!
  5. Seal the pastries: Use a whisk to beat the egg and milk together. Brush the edges of the pies with the egg wash, then fold the empty half over the filling. Press down to seal, and use a fork to crimp the edges.
  6. Provide vents: Cut a few small slits in the top of each pastry to allow steam to escape.
Baking
  1. Bake: Place the tarts on a parchment-lined baking sheet and bake for 20–25 minutes or until golden brown.
Cooling and Glazing
  1. Cool and glaze: Let the pastries cool for a few minutes. If desired, mix powdered sugar and milk to create a glaze and drizzle it over the tarts.

Notes

Store in an airtight container at room temperature for up to 2 days. Refrigerate for up to a week or freeze (before baking) for up to 3 months. To reheat, bake at 350°F (175°C) for about 10 minutes.
