  • 1/2 cup baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Wet Ingredients
  • 1/2 cup butter, softened Ensure butter is at room temperature.
  • 1 large egg
  • 1 teaspoon vanilla extract
Mix-Ins
  • 1 cup diced apples Fresh apples work best for texture.
  • 1/2 cup walnuts or pecans Optional for added crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, granulated sugar, baking soda, cinnamon, and nutmeg. Mix until well blended.
  3. In another bowl, cream together the softened butter, egg, and vanilla extract until fluffy.
  4. Gradually add the dry ingredients into the butter mixture and stir until combined, being careful not to over mix.
  5. Fold in the diced apples and nuts, if using.
  6. Using a tablespoon or cookie scoop, drop generous portions of dough onto a parchment-lined baking sheet.
Baking
  1. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze layered with parchment paper for up to three months.
