Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, granulated sugar, baking soda, cinnamon, and nutmeg. Mix until well blended.
- In another bowl, cream together the softened butter, egg, and vanilla extract until fluffy.
- Gradually add the dry ingredients into the butter mixture and stir until combined, being careful not to over mix.
- Fold in the diced apples and nuts, if using.
- Using a tablespoon or cookie scoop, drop generous portions of dough onto a parchment-lined baking sheet.
Baking
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze layered with parchment paper for up to three months.
