Ingredients
  

For the apple filling
  • 4 large apples, peeled and diced
  • 1 cup sugar can be substituted with honey or a sugar substitute
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
For assembling
  • 1 package egg roll wrappers
  • Caramel sauce, for drizzling (optional) adds extra sweetness

Method
 

Preparation
  1. In a mixing bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Stir until the apples are well coated with the mixture.
  2. Take an egg roll wrapper and place about two tablespoons of the apple mixture in the center of the wrapper. Fold the edges over the filling and roll tightly, sealing the edges with a little water.
Cooking
  1. In a large pot or deep fryer, heat oil to 350°F (175°C). The oil should be deep enough to allow the egg rolls to float while frying.
  2. Carefully place a few egg rolls in the hot oil and fry them for about 3-4 minutes or until they turn golden brown. Make sure not to overcrowd the pot.
  3. Once cooked, remove the egg rolls and place them on a paper towel-lined plate to drain excess oil.
Serving
  1. Drizzle with caramel sauce if desired and serve warm with a scoop of ice cream for an added treat!

Notes

For a healthier option, consider using honey instead of sugar or other fruits like pears or cherries for a twist. Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, bake at 375°F (190°C) for about 10-12 minutes until crispy again.
