Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until fluffy, about 2-3 minutes.
  3. Add in the large egg and vanilla extract, mixing well until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon.
  5. Slowly add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Gently fold in the diced apples to ensure they're evenly distributed throughout the batter.
  7. Using a tablespoon or cookie scoop, drop heaping mounds of dough onto the prepared baking sheet, leaving space between each mound.
  8. Drizzle a teaspoon of caramel sauce on top of each mound of cookie dough.
Baking
  1. Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the edges are golden brown.
Cooling
  1. Allow the cookies to cool on the baking sheet for a couple of minutes before transferring to wire racks to cool completely.
