Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a separate large bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy, approximately 2-3 minutes.
- Beat in the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix.
- Gently fold in the diced apples.
- Using a cookie scoop or spoon, drop tablespoon-sized amounts of dough onto the prepared baking sheet.
Baking
- Bake the cookies for 10-12 minutes, or until the edges are golden brown.
- Once cool, drizzle warm caramel sauce over the cookies.
- Let the cookies cool on a wire rack before enjoying.
Notes
Store in an airtight container at room temperature for up to 5 days. Freeze for up to 3 months. Allow to sit at room temperature before serving or warm in the microwave for 10-15 seconds.
