For the cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1.5 cups peeled and diced apples (about 2–3 medium apples)
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 0.5 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well-combined.
  3. Add the softened butter and mix well until the mixture is crumbly.
  4. In a separate bowl, whisk together the eggs, vanilla extract, and milk until they are well-blended.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples gently.
Baking
  1. Pour the batter into your prepared baking pan, spreading it evenly. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
Glazing
  1. While the cake is baking, mix the powdered sugar, milk, and vanilla in a small bowl until smooth.
  2. Once the cake is done, allow it to cool for about 10 minutes before drizzling with the glaze.

Notes

Choose a balance of tart and sweet apples like Granny Smith or Honeycrisp for the best flavor. Store in an airtight container at room temperature for up to three days or in the fridge for a week.
