Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with some melted butter.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.
- In another bowl, combine the melted butter, buttermilk, and eggs. Whisk until smooth.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix! Fold in the diced apples slowly.
Crumble Topping
- In a separate bowl, mix the brown sugar, oats, flour, and cold butter using a fork until crumbly.
Baking
- Divide the muffin batter evenly among the muffin cups, filling each about two-thirds full. Top generously with the crumble mixture.
- Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and allow them to cool slightly before transferring to a wire rack. Enjoy warm!
