  • 1/2 teaspoon baking soda Leavening agent.
  • 1/2 teaspoon salt Enhances flavor.
  • 1 teaspoon ground cinnamon For flavor.
  • 1/2 cup unsalted butter, melted For moisture.
  • 1 cup buttermilk Alternatively, substitute with homemade version.
  • 2 large eggs For binding.
  • 2 cups diced apples Preferably a mix of tart and sweet.
Crumble Topping
  • 1/2 cup brown sugar For sweetness.
  • 1/2 cup oats For texture.
  • 1/4 cup all-purpose flour For the crumble.
  • 1/4 cup cold butter For crunchiness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with some melted butter.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.
  3. In another bowl, combine the melted butter, buttermilk, and eggs. Whisk until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix! Fold in the diced apples slowly.
Crumble Topping
  1. In a separate bowl, mix the brown sugar, oats, flour, and cold butter using a fork until crumbly.
Baking
  1. Divide the muffin batter evenly among the muffin cups, filling each about two-thirds full. Top generously with the crumble mixture.
  2. Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  3. Remove the muffins from the oven and allow them to cool slightly before transferring to a wire rack. Enjoy warm!

Notes

To keep your muffins fresh, store them in an airtight container at room temperature for up to 3 days. For longer storage, you can freeze them for up to 3 months. To reheat, microwave for about 15-20 seconds or in a preheated oven at 350°F (175°C) for 5-10 minutes.
