Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine sliced apples with a sprinkle of cinnamon and set them aside to marinate.
- In another bowl, mix the graham cracker crumbs with melted butter and a bit of sugar until well combined. Press this mixture into the bottom of a 9-inch springform pan.

- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add in the sugar, sour cream, and eggs, mixing until you achieve a creamy consistency.
- Finish by adding the vanilla extract.
Combining and Baking
- Fold in the marinated apples and then pour this filling over the prepared crust in the springform pan.
- In a separate bowl, mix the oats, flour, cinnamon, brown sugar, and a touch of melted butter. Sprinkle this mixture generously on top of the cheesecake filling.
- Carefully place the springform pan in the preheated oven and bake for about 50 minutes or until the center is set but still jiggles slightly.
Cooling and Serving
- Once baked, remove it from the oven and allow it to cool at room temperature.
- Chill it in the refrigerator for at least 4 hours (or overnight) before serving.
