Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
For the cheesecake filling
  • 4 packages cream cheese, softened (8 oz each)
  • 1 cup sugar remaining after crust
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups diced apples
  • 1 teaspoon cinnamon
For the crumble topping
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C). In a bowl, combine the graham cracker crumbs with melted butter and 1/4 cup of sugar. Press this mixture firmly into the bottom of a 9-inch springform pan.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the remaining sugar and vanilla extract, continuing to blend. Beat in the eggs one at a time, making sure everything is well combined.
  3. Fold in the diced apples and cinnamon into the cheesecake batter. Pour the apple cheesecake filling over the prepared crust and smooth the top.
  4. In a separate bowl, mix together the rolled oats, brown sugar, and optional chopped nuts. Evenly distribute this crumble mixture over the cheesecake filling.
Baking
  1. Bake in the preheated oven for about 60 minutes or until the center is just set. Turn off the oven and let the cheesecake cool inside for about an hour, which helps prevent cracking.
Chilling and Serving
  1. Once cooled, refrigerate the cheesecake for at least four hours (overnight is ideal). Serve chilled, and enjoy the delightful mixture of creamy, crunchy, and fruity flavors!
