Preparation
- Preheat the oven to 350°F (175°C).
- Prepare the apple filling: In a medium bowl, mix the diced apples, brown sugar, cinnamon, oats, and flour. Set aside to allow the apples to marinate.
- Make the cheesecake filling: In a large bowl, beat the softened cream cheese until creamy. Gradually add the sugar and mix until smooth. Fold in the vanilla extract and whipped cream.
- Spoon the cheesecake filling into mini cheesecake crusts, filling them halfway, then add a generous layer of the apple filling on top.
Baking
- Place the cheesecakes on a baking sheet and bake for 15-20 minutes or until the tops are golden brown.
- Remove from the oven and let them cool for at least 30 minutes before serving.

- Serve chilled or at room temperature.
