Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
Apple Crisp Topping
  • 1 cup apples, peeled and diced
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 tsp cinnamon
  • 1/4 cup butter, melted

  • 12 pieces mini cheesecake crusts

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Prepare the apple filling: In a medium bowl, mix the diced apples, brown sugar, cinnamon, oats, and flour. Set aside to allow the apples to marinate.
  3. Make the cheesecake filling: In a large bowl, beat the softened cream cheese until creamy. Gradually add the sugar and mix until smooth. Fold in the vanilla extract and whipped cream.
  4. Spoon the cheesecake filling into mini cheesecake crusts, filling them halfway, then add a generous layer of the apple filling on top.
Baking
  1. Place the cheesecakes on a baking sheet and bake for 15-20 minutes or until the tops are golden brown.
  2. Remove from the oven and let them cool for at least 30 minutes before serving.
Serving
  1. Serve chilled or at room temperature.
