Ingredients
  

For the crust
  • 1 cup crushed graham crackers
  • 2 tablespoons sugar
  • 4 tablespoons butter, melted
For the cheesecake filling
  • 8 ounces cream cheese, softened Ensure it is at room temperature for easy mixing.
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Do not overmix to keep cheesecakes fluffy.
For the apple filling
  • 2 cups peeled and chopped apples
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
For the crisp topping
  • 1/2 cup rolled oats
  • 1/4 cup flour
  • 1/4 cup butter, softened

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners for easy removal.
  2. In a medium bowl, combine the crushed graham crackers, sugar, and melted butter for the crust. Mix until combined, then evenly distribute the mixture into each muffin cup, pressing it down firmly.
  3. In a large mixing bowl, beat together the softened cream cheese and sugar until smooth. Add the vanilla extract and then incorporate the eggs, mixing until fully combined.
  4. In another bowl, toss the chopped apples with cinnamon and brown sugar until well coated.
Assembly
  1. Pour a generous amount of cheesecake batter over the crust in the muffin tins.
  2. Add a layer of the apple mixture on top of the cheesecake batter.
  3. Finish with a sprinkle of the crisp topping made from oats, flour, and softened butter.
Baking
  1. Bake for about 20-25 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  2. Allow them to cool in the tin before transferring them to a wire rack to cool completely.
Chilling
  1. Chill in the refrigerator for at least one hour before serving.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Can be frozen for up to 3 months; thaw in the fridge before serving.
