Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the eggs, one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet mixture until just combined. Fold in the diced apples gently.
- Pour the batter into the prepared baking pan and spread evenly.
Topping and Baking
- In another bowl, combine the oats and any remaining brown sugar with a sprinkle of cinnamon.
- Crumble this mixture evenly over the batter.
- Place the pan in the oven and bake for around 30-35 minutes until a toothpick inserted in the center comes out clean.
Cooling and Serving
- Let the coffee cake cool for about 10 minutes before slicing. Serve warm and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months, thaw in the fridge overnight and reheat in the oven at 350°F (175°C) for about 10-15 minutes.
