Cake Batter
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened Can be substituted with plant-based margarine for a Halal-friendly option.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples Feel free to use other fruits like pears or berries.
Crispy Topping
  • 1 cup old-fashioned oats
  • 1 tsp cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry mixture to the wet mixture until just combined. Fold in the diced apples gently.
  6. Pour the batter into the prepared baking pan and spread evenly.
Topping and Baking
  1. In another bowl, combine the oats and any remaining brown sugar with a sprinkle of cinnamon.
  2. Crumble this mixture evenly over the batter.
  3. Place the pan in the oven and bake for around 30-35 minutes until a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Let the coffee cake cool for about 10 minutes before slicing. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months, thaw in the fridge overnight and reheat in the oven at 350°F (175°C) for about 10-15 minutes.
