Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of a greased 9-inch springform pan to create an even crust.
- In a large mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Beat until smooth and creamy. Add the eggs, one at a time, until fully incorporated.
- Fold in the diced apples and cinnamon into the cheesecake mixture.
Baking
- Pour the cheesecake mixture over the crust in the springform pan. Bake for 45-50 minutes, or until the center is set and lightly jiggly.
- While the cheesecake is baking, mix rolled oats, brown sugar, and flour in a small bowl. Once the cheesecake is done, take it out of the oven and sprinkle the crisp topping evenly over the baked cheesecake.
- Return the cheesecake to the oven and bake for an additional 15-20 minutes, allowing the topping to turn golden brown.
Cooling and Serving
- Let the cheesecake cool before covering and refrigerating for at least 4 hours or overnight for best results.
- When ready to serve, remove the springform and slice into wedges.
Notes
For a lower sugar option, consider using a natural sweetener such as honey or maple syrup. Make sure to allow the cheesecake to cool fully in the refrigerator to achieve that perfect slice. Cover and refrigerate leftovers for up to 5 days or freeze individual slices for up to three months.
