Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, 1/2 cup sugar, and melted butter. Mix thoroughly until the crumbs are coated.
- Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust.
Make the Cheesecake Filling
- In another bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy.
- Add in the eggs one at a time, mixing well after each addition.
Layer the Apples
- In a medium bowl, toss the sliced apples with cinnamon until well coated.
- Spread the apple mixture evenly over the cream cheese filling in the springform pan.
Prepare the Apple Crisp Topping
- In a small bowl, mix the oats and brown sugar.
- Sprinkle this mixture generously over the apple layer.
Bake
- Bake your cheesecake in the preheated oven for about 50 to 60 minutes or until the edges are set and the center has a slight jiggle.
- A toothpick should come out clean from the cheesecake part.
Chill
- Let the cheesecake cool at room temperature for an hour before transferring it to the refrigerator.
- Chill for at least 4 hours, preferably overnight, for the best taste.

Store any leftover Apple Crisp Cheesecake in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat if desired.
