Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Add one at a time
For the apple layer
  • 4 cups sliced apples (preferably Granny Smith or Honeycrisp)
  • 1 teaspoon cinnamon
For the apple crisp topping
  • 1/4 cup old-fashioned oats
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, 1/2 cup sugar, and melted butter. Mix thoroughly until the crumbs are coated.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust.
Make the Cheesecake Filling
  1. In another bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy.
  2. Add in the eggs one at a time, mixing well after each addition.
Layer the Apples
  1. In a medium bowl, toss the sliced apples with cinnamon until well coated.
  2. Spread the apple mixture evenly over the cream cheese filling in the springform pan.
Prepare the Apple Crisp Topping
  1. In a small bowl, mix the oats and brown sugar.
  2. Sprinkle this mixture generously over the apple layer.
Bake
  1. Bake your cheesecake in the preheated oven for about 50 to 60 minutes or until the edges are set and the center has a slight jiggle.
  2. A toothpick should come out clean from the cheesecake part.
Chill
  1. Let the cheesecake cool at room temperature for an hour before transferring it to the refrigerator.
  2. Chill for at least 4 hours, preferably overnight, for the best taste.
Serve
  1. Serve cold, and watch your loved ones dive in!

Notes

Store any leftover Apple Crisp Cheesecake in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat if desired.
