  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups peeled, diced apples
Glaze
  • 1 cup apple cider
  • 1 cup powdered sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter or non-stick spray.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Gradually add the dry mixture to the butter mixture, alternating with sour cream until just combined.
  7. Gently fold in the diced apples until evenly distributed.
Baking
  1. Pour the batter into the prepared baking pan, smoothing it out evenly.
  2. Bake for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Glazing
  1. While the cake is baking, whisk together the powdered sugar and apple cider until smooth.
  2. Once the cake is cool, pour the apple cider glaze over the top and let it drizzle down the sides.

Notes

For the best flavor, use freshly diced apples like Fuji or Honeycrisp. To store, keep in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
