Preparation
- In a medium-sized bowl, combine the peeled and diced apples, cinnamon, sugar, and lemon juice. Mix until the apples are well coated and set aside.
- Preheat your oven to 400°F (200°C).
- On a lightly floured surface, roll out your pie crust to about 1/8 inch thick.
- Cut the rolled dough into rectangles, approximately 3 x 4 inches each.
Assembling and Baking
- Take half of the dough rectangles and spoon about a tablespoon of the apple mixture onto each.
- Top each with another rectangle of dough and gently press the edges to seal.
- Crimp the edges with a fork to secure them.
- Beat the egg and brush it over the tops of the sealed pop tarts.
- Bake the pop tarts on a parchment-lined baking sheet for about 15-20 minutes until golden and flaky.
Finishing Touches
- While the pop tarts are baking, mix the powdered sugar with 1-2 tablespoons of milk to achieve the desired glaze consistency.
- Once out of the oven and slightly cooled, drizzle the glaze over the tops.
Notes
For substitutions, you can use puff pastry instead of pie crust. Monitor baking closely to avoid over-baking.
