Ingredients
  

For the Cookie Dough
  • 1 cup apple cider Reduce to 1/2 cup for intense flavor.
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar Packed.
  • 1/2 cup granulated sugar
  • 2 pieces eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
For the Cream Cheese Filling
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper.
  2. In a saucepan, bring the apple cider to a boil over medium heat. Allow it to reduce down to about 1/2 cup and let it cool.
  3. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  4. Beat in the eggs one at a time until fully incorporated.
  5. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add this dry mix to the wet mixture, alternating with the reduced apple cider. Stir until just combined.
Baking and Assembly
  1. Drop the cookie dough onto the prepared baking sheet, leaving space between each dollop. Bake for 12-15 minutes or until they spring back when lightly touched.
  2. Mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Once the cookies have cooled, pipe or spread the cream cheese filling onto the flat side of one cookie, then top with another cookie.
  4. Serve immediately or store in an airtight container in the refrigerator.

Notes

For a lighter texture, separate the egg whites from the yolks and whip the whites until soft peaks form before folding them into the dough. You can substitute different flavored cream cheese, such as maple or caramel, for unique variations. To prevent dry cookies, avoid overmixing the dough.
