- Preheat your oven to 350°F (175°C) and grease your bundt or loaf pan with butter or non-stick spray.
- In a large mixing bowl, cream together the softened butter and sugar using a hand mixer or stand mixer on medium speed until light and fluffy, about 5 minutes.
- Add the eggs one at a time, ensuring they are fully incorporated before adding the next. Scrape down the sides of the bowl as needed.
- Gradually pour in the apple cider and mix until just combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture. Be careful not to overmix; combine until just moist.
- Pour the batter into the prepared pan and smooth the top. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
