Preparation
- Preheat your oven to 350°F (175°C).
- Grease or line a muffin pan with paper liners.
Mixing
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, blend the wet ingredients: eggs, melted butter, apple cider, and vanilla extract until smooth.
- Gradually pour the wet mixture into the bowl with the dry ingredients, stirring gently until just combined.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
Baking
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the muffins are cooling, mix 1/4 cup sugar with 2 tsp cinnamon.
- Lightly coat each muffin in the cinnamon-sugar mixture once they've cooled for a few minutes.
Serving
- Let the muffins cool slightly on a wire rack, then enjoy them warm.
Notes
Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Reheat in the microwave or oven to restore texture.
