Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a small saucepan, reduce the apple cider over medium heat until it thickens slightly—about 10-15 minutes. Let it cool.
- In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, combine the eggs, cooled apple cider, vegetable oil, and vanilla extract. Mix until well blended.
- Fold the wet mixture into the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
