  • 1.5 cups all-purpose flour
  • 1 cup apple cider Use fresh apple cider for maximum flavor.
  • 0.5 cups granulated sugar
  • 0.5 cups brown sugar
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • a pinch salt

Method
 

Preparation and Baking
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the apple cider, vegetable oil, granulated sugar, and brown sugar until smooth. Then, beat in the eggs one at a time until thoroughly combined.
  3. In another bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  4. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined. Do not overmix!
  5. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  6. Place the cupcake tray in the oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Serve with warm tea or coffee. For added flavor, consider cinnamon-spiced whipped cream or a light apple salad.
