Preparation and Baking
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together the apple cider, vegetable oil, granulated sugar, and brown sugar until smooth. Then, beat in the eggs one at a time until thoroughly combined.
- In another bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
- Gradually add the dry mixture to the wet ingredients, mixing gently until just combined. Do not overmix!
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Place the cupcake tray in the oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Serve with warm tea or coffee. For added flavor, consider cinnamon-spiced whipped cream or a light apple salad.
