  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 apples, peeled, cored, and diced
Broth and Cheese
  • 4 cups vegetable broth
  • 1 cup shredded sharp cheddar cheese
Seasoning
  • Salt and pepper to taste
Garnish
  • Fresh herbs for garnish (optional) Use your favorite herbs.

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
Cooking
  1. Add the cubed sweet potatoes and diced apples to the pot. Stir well to combine with the sautéed mixture.
  2. Pour in the vegetable broth, ensuring all ingredients are submerged, and bring to a boil.
  3. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, or until the sweet potatoes are tender.
  4. Using an immersion blender, blend the soup until it is completely smooth.
  5. Return the soup to the pot (if you used a blender) and stir in the shredded sharp cheddar cheese. Allow it to melt, then season with salt and pepper.
  6. Ladle into bowls, garnish with fresh herbs if desired, and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to five days or freeze for up to three months. Reheat on the stove, adding vegetable broth if too thick.
