Ingredients
  

Main Ingredients
  • 2 cups broccoli florets Fresh, chopped into bite-sized pieces.
  • 1 each apple Diced, any variety you prefer.
  • 1/4 cup red onions Thinly sliced.
  • 1/4 cup raisins or dried cranberries For sweetness.
  • 1/4 cup sunflower seeds For crunch.
Dressing Ingredients
  • 1/4 cup mayonnaise Feel free to use a Halal-approved version.
  • 1 tablespoon apple cider vinegar
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Rinse and chop the broccoli into bite-sized florets. Blanch them in boiling water for about 1 minute if you prefer a slightly softer texture, then drain and let them cool.
  2. Core and dice the apple of your choice. You can leave the skin on for an extra crunch and bit of color.
Mixing and Dressing
  1. In a large mixing bowl, combine the cooled broccoli florets, diced apple, thinly sliced red onion, raisins or dried cranberries, and sunflower seeds.
  2. In a small bowl, mix together the mayonnaise, apple cider vinegar, and a generous pinch of salt and pepper.
Combining and Serving
  1. Pour the dressing over your broccoli mixture and toss everything together until well-coated.
  2. Allow the salad to sit for about 10 minutes to let the flavors meld. Serve chilled or at room temperature.

Notes

For substitutions, feel free to experiment with different nuts, such as almonds or walnuts, instead of sunflower seeds. You could use yogurt instead of mayonnaise for a lighter option. To maintain freshness, store any leftovers in an airtight container in the refrigerator, best eaten within 2-3 days.
