Salad Base
  • 4 cups mixed greens (such as spinach and arugula) Make sure to rinse and dry thoroughly.
  • 2 Honeycrisp apples, sliced Slice just before serving for maximum crunch.
Add-Ins
  • 1 cup walnuts or pecans, roughly chopped Toasted for extra flavor.
  • 1 cup feta cheese, crumbled You can substitute with goat cheese or a dairy-free alternative if desired.
  • ½ cup dried cranberries
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Set it aside to let the flavors develop.
  2. In a large salad bowl, add the mixed greens and ensure they are well washed and dried.
  3. Toss in the sliced Honeycrisp apples, walnuts or pecans, dried cranberries, and feta cheese.
  4. Drizzle the dressing over the salad and gently toss everything together using tongs to coat evenly.
  5. Taste the salad and adjust with more salt or pepper as needed, then toss again.
  6. Transfer the salad to a serving dish or serve directly from the bowl.

Notes

For crunchier apples, slice them just before serving. Adding a splash of lemon juice can help prevent browning. Salads are best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
