  • 3 cups cooked, shredded chicken Rotisserie chicken is great!
  • 1 cup sour cream
  • 1 can cream of chicken soup 10.5 oz can
  • 1 cup grated cheddar cheese
  • 1 cup frozen mixed vegetables Corn, peas, and carrots
Topping
  • 1 cup crushed crackers or breadcrumbs For topping
  • Salt and pepper To taste

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked, shredded chicken, sour cream, cream of chicken soup, cheddar cheese, and frozen mixed vegetables.
  3. Season the mixture with salt and pepper.
  4. Use a spatula or wooden spoon to mix the ingredients thoroughly until well combined.
  5. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  6. Sprinkle crushed crackers or breadcrumbs on top, ensuring an even coverage.
Baking
  1. Place the dish in the preheated oven and bake for 30-45 minutes, or until the casserole is bubbly and golden on top.
  2. Remove from the oven, allow it to cool slightly, and then serve.

Notes

For best results, shred your chicken well for even distribution. Feel free to use any frozen vegetables on hand. You can increase the cheese for a cheesier flavor. Store leftovers in an airtight container for up to 3 days or freeze for 2-3 months.
