Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground almonds, sugar, and salt. Mix well.
- In another bowl, beat the egg whites until they form soft peaks. Gently fold the egg whites into the almond mixture, then stir in the almond extract.
- Use a tablespoon to scoop out portions of the dough and place them onto a parchment-lined baking sheet.
- Bake for about 20 minutes, or until the tops are set and lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
- Dust with powdered sugar if desired, and serve.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag for up to three months. Let thaw at room temperature before serving.
