Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground almonds, sugar, and salt. Mix well.
  3. In another bowl, beat the egg whites until they form soft peaks. Gently fold the egg whites into the almond mixture, then stir in the almond extract.
  4. Use a tablespoon to scoop out portions of the dough and place them onto a parchment-lined baking sheet.
  5. Bake for about 20 minutes, or until the tops are set and lightly golden.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
  7. Dust with powdered sugar if desired, and serve.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag for up to three months. Let thaw at room temperature before serving.
