Coating
  • 1/2 cup almond flour Gluten-free and adds a nice crunch.
  • 1/4 cup grated parmesan cheese Optional for a cheesy flavor.
  • 1 tablespoon garlic powder For that delicious garlic kick.
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon black pepper Adds a bit of heat.
  • 1 tablespoon olive oil For coating.

Preparation
  1. Wash the zucchinis thoroughly and slice them into 1/4-inch rounds.
  2. In a bowl, mix the almond flour, parmesan cheese (if using), garlic powder, salt, and pepper.
  3. Drizzle olive oil over the zucchini rounds and toss to coat evenly.
  4. Dip each piece into the flour mixture, ensuring that each slice is well-coated.
Cooking
  1. Preheat your air fryer to 400°F (200°C).
  2. Place the coated zucchini in the air fryer basket in a single layer, cooking in batches if necessary.
  3. Cook for about 12-15 minutes, flipping halfway through, until golden and crispy.
  4. Remove from the air fryer and serve immediately, optionally adding fresh herbs or extra cheese on top.

Notes

Choose smaller zucchinis for optimal freshness. Experiment with spices for extra flavor, and avoid overcrowding the air fryer for even cooking. Leftovers can be used in frittatas or salads.
