  • 1 cup bell peppers, sliced (red, yellow, green)
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon pepper adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Preparation
  1. Gather your ingredients: Start by gathering all the vegetables you’ve chosen.
  2. Wash and slice your vegetables into even pieces for consistent cooking.
  3. In a large bowl, combine olive oil, salt, pepper, garlic powder, and onion powder. Toss your vegetables in this mixture until evenly coated.
Cooking
  1. Preheat your air fryer to 375°F (190°C).
  2. Once preheated, arrange the vegetables in a single layer in the basket, avoiding overcrowding them.
  3. Air fry your vegetables for 15-20 minutes, shaking the basket halfway through.
Serving
  1. Once done, take out your crispy vegetables, and serve them hot.
  2. Enjoy them as a side dish or toss them into salads and grain bowls.

Notes

Feel free to substitute with your favorite seasonal vegetables. Store leftovers in an airtight container for up to three days, or freeze them. Reheat in the air fryer to restore crispiness.
