Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine almond flour, oats, baking powder, and salt. Mix until well combined.
- In another bowl, combine melted coconut oil, honey (or maple syrup), and vanilla extract. Whisk until mixed thoroughly.
- Slowly pour the wet ingredients into the dry ingredients. Stir gently until everything is well combined.
- Fold in chocolate chips.
- Lightly grease an 8-inch pie dish with coconut oil or line with parchment paper.
Baking
- Pour the mixture into the prepared dish and spread it out evenly.
- Bake for about 20-25 minutes or until the edges are golden brown and the center is firm to the touch.
Serving
- Allow the cookie pie to cool for at least 10 minutes before slicing. Serve warm and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for 3-5 days, or freeze individual slices for longer storage. Reheat in the oven or microwave before serving.
