Dry Ingredients
  • 1 cup almond flour Can substitute with oat flour if needed.
  • 1/2 cup oats
  • 1/2 teaspoon baking powder
  • a pinch salt
Wet Ingredients
  • 1/4 cup honey or maple syrup Honey can be replaced with agave syrup for a vegan version.
  • 1/4 cup coconut oil, melted Can substitute with another oil if desired.
  • 1/2 teaspoon vanilla extract
Add-ins
  • 1/4 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, oats, baking powder, and salt. Mix until well combined.
  3. In another bowl, combine melted coconut oil, honey (or maple syrup), and vanilla extract. Whisk until mixed thoroughly.
  4. Slowly pour the wet ingredients into the dry ingredients. Stir gently until everything is well combined.
  5. Fold in chocolate chips.
  6. Lightly grease an 8-inch pie dish with coconut oil or line with parchment paper.
Baking
  1. Pour the mixture into the prepared dish and spread it out evenly.
  2. Bake for about 20-25 minutes or until the edges are golden brown and the center is firm to the touch.
Serving
  1. Allow the cookie pie to cool for at least 10 minutes before slicing. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days, or freeze individual slices for longer storage. Reheat in the oven or microwave before serving.
